If you haven’t seen or tried this Two Ingredients Pancakes recipe before you really ought to give it try. We rarely eat pancakes, but when I came across this recipe, I just had to try it. The simplicity and minimal ingredients appealed to me. I use organic eggs and bananas, but you don’t have to. Just mash the peeled banana with a fork, add the eggs and give it a good beat. A non-stick pan will be perfect, but if you don’t have one, just a bit of vegetable oil with a small tad of butter works well to move them around because they’re fragile. As you can see from the photo below, I just topped it off with some chopped walnuts and a few raisins and served it with pure, organic maple syrup. A cup of orange pekoe tea was just perfect with it!
