Here’s a meatloaf recipe that’s simple, quick and tastes delicious! You can use whatever type of ground meat you like or a combination of meats. We have been able to find a meatloaf mixture consisting of beef, pork and lamb or beef, pork and veal in equal parts. A meatloaf can provide several meals and you can have it with vegetables and a grain, with a salad or in a sandwich – it is versatile. Here’s our recipe using a mix of beef, pork and lamb.
Marvelous Meatloaf
Prep Time: 15 - 20 minutes
Baking Temp: 350 F; One (1) hour
Ingredients
1 package Meatloaf mix (approximately) one and a half pounds
1 medium/large onion
4 medium size garlic cloves
Cilantro
4 small mushrooms
Salt
Pepper
Tomato Sauce
2 eggs
Worcestershire Sauce
Instructions
Place the following ingredients in a large bowl:
1 package of Meatloaf Mix
Dice the onion into quarter to half inch squares. Finely chop the garlic cloves
Coarsely chop the cilantro and mushrooms. Add salt to taste and freshly ground black pepper.
In a separate small bowl, beat the 2 eggs and add 2 tablespoons of Worcestershire Sauce plus 1-1/2 cups of tomato sauce (you might wish to try a nice chunky style with basil). Mix well.
Add this mixture to the ingredients in the large bowl and mix thoroughly by hand. Shape into a loaf and place in a bread pan. Bake at 350 degrees for 1 hour.
